In the years 1996-2000, we renovated the cellars of Palazzone, renovating the original building, with wine–making in steel containers and ageing in oak barrels and inside the “barriques”, old containers dug in the tuff of which the ancient grottoes are made.

A constant temperature of 12 °C is maintained in the area set aside for ageing with minimum summer/winter variations of ±2 °C, and 80-85% humidity.
